Marshmallow, Coconut & Dark chocolate chunk cookies

Who’s ready for some cookies? I sure am. I guess I’m always ready for something sweet. It’s 11 days til Christmas and I am no where near ready. Thankfully, I did get some gifts bought today. Christmas cards still need to be sent, and I still have a couple bulbs to add to the tree. And many gifts to wrap. I’ve been having to skip the gym on my off days this week, just to catch up. And of course, I had to make some time to make some of these yummy cookies.

Weeks ago, I found some coconut chips at target, and I had to find something to make with them. And that’s why this recipe was created. These cookies are delicious!! And sweet! You’ll be satisfied with just a couple. They are the perfect blend of coconut flavor (not overpowering) with little bits of marshmallows and dark chocolate chunks. They are so good!

Shopping list (Cookie ingredients)

  • 1 1/2 sticks of soft unsalted butter
  • 1 Egg
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup of dark chocolate chunks ( pictured is 1 bagful, we’ve found less chocolate is better) but add to your liking
  • 1/3 cup coconut chips (unsweetened)
  • 1/2 cup miniature marshmallows
Just in case your wondering what the coconut chips are….

Directions:

Preheat your oven to 350 degrees. Add 1 1/2 sticks of soft unsalted butter to your mixing bowl. (I used my stand mixer) Then add 3/4 cup granulated sugar and 3/4 cup brown sugar and cream together on medium until combined.

Then add 1 egg and 2 teaspoons of vanilla and mix on low.

Now it’s time to add 2 cups flour, and 1 teaspoon salt, 1 teaspoon baking soda and mix on low. Until combined.

Once combined, add in the chocolate chunks, 1/3 cup of coconut chips and 1/2 cup miniature marshmallows

Tuck in any marshmallows so they don’t spill out of your cookie.

Bake for approx 10-12 mins at 350 degrees. Let the cookies sit for 5-7 mins until they cool, then transfer to a cookie cooling rack. Your cookies might stick if some of the marshmallows oozed out FYI. Those cookies would be perfect in ice cream. You’ll have about 2 batches of cookies. Depending on the size of your cookies. Definitely let them cool before you put them in a ziplock bag.

You’ll definitely need some milk with these!! I think I need a bigger glass.
