Black Bean and Sweet Potato Tacos

It amazes me how you can take such simple ingredients and turn them into something amazing. This dish revolves around a sweet potato and a can of black beans. And lots of limes and cilantro. The good stuff really. Yes, I’m talking about cilantro. I love that stuff. And it’s so good for you. Just like my citrus, I always make sure to have some on hand.

One thing I do enjoy is cooking with my husband. He’s not like me and he comes up with things on the fly. For instance. This recipe was his vision, but we developed it together, as we cooked. And we’ve perfected this recipe to share with you all! It has a couple parts to the recipe but worth making.

We’ve lately become a fan of cooking with coconut oil. And with this dish we feel it really enhances the flavors.

Let’s get started….

Ingredients for Vegetarian Refried Black Beans:

  • 1 can of black beans
  • 1 clove of garlic -minced
  • 1/2 of a red onion- diced
  • 1 jalapeño -diced (remove seeds)
  • 1/4 teaspoon whole cumin seeds
  • 1 cup vegetable stock
  • 1 tablespoon coconut oil
  • 1/4 cup chopped cilantro
  • Salt and pepper

Directions:

  1. Start by adding 1 tablespoon of coconut oil to your saute pan. Then add 1/4 teaspoon of whole cumin seeds. Cook them until they start to pop. Then add 1/2 red onion diced, 1 diced jalapeño, and 1 clove of garlic minced. Season with a dash of salt and pepper (we used pink peppercorns this time).
  2. Drain and rinse 1 can of black beans and add them to your saute pan. Then add 1 cup of vegetable stock. And top it with 1/4 cup of chopped cilantro. Season with salt and pepper and let them simmer for about 5 mins. Taste the broth and season if needed.
  3. Then place them in your blender and puree them until smooth.
  4. Then add them back to your saute pan. At this point they are so smooth and creamy. Truly delicious!! Leave them on simmer low and cover them until you are ready to use them.

Now it’s time to get your sesame and pepita topping ready.

Ingredients:

  • 1/4 cup granulated sugar
  • 1/8 cup water (or 2 tablespoons)
  • 2 tablespoons sesame seeds
  • 2 tablespoons pepitas
  • salt

Directions:

  1. Put 1/8 cup water and 1/4 cup granulated sugar into a saute pan.
  2. Cook on medium heat until the sugar melts and starts to turn golden brown.
  3. Then mix in the seeds -2 tablespoons sesame seeds and 2 tablespoons pepitas.
  4. Once the seeds are coated season with salt and pour on parchment paper.
  5. Press into a thin layer.
  6. Allow to cool before you break it into small pieces.

Now it’s time to get your Sweet potatoes ready…

Ingredients for the sweet potatoes tacos:

  • 2 medium sweet potatoes
  • Coconut oil
  • Lime salt -Recipe below
  • 2-3 limes
  • 1 jalapeño
  • Queso fresco
  • Cilantro
  • 1 pack of small corn tortillas

Curious about lime salt?

This stuff is delicious!! Make it by adding 1 tablespoon of salt to a bowl and the zest from 1 lime. And mix together. Give it a taste. When I tasted it for the first time, all I could think about was a yummy margarita.

Directions for the sweet potatoes:

  1. Microwave your sweet potatoes for 4 mins. Or until soft. Place in the refrigerator to cool
  2. Once cool peel potatoes and slice into 1/4” thick slices. Season with lime salt on both sides.
  3. Add coconut oil to a preheated pan over medium high heat.
  4. Add potato slices and cook until the potatoes have good color (brown edges). About 3 mins per side.
  5. Remove from the pan and season with lime juice.
  6. Set aside on a plate.
  7. Then sauté your onions and cilantro.
  8. Warm your tortillas on the stove to give them some color.

Now get ready to put your tacos together…

  1. Grab your warmed tortilla
  2. Spread your refried beans on your tortilla.
  3. Then lay 2-3 sweet potato slices on top of your beans.
  4. Top them with the sautéed onions.
  5. Then sprinkle on some chopped cilantro and queso fresco.
  6. Add the sesame and pepita crunch on top then lastly fresh jalapeño slices. And a squeeze of lime.

I hope you made more than one for yourself, I can almost guarantee you’ll want another…

Roasted Butternut Squash Pizza

There is nothing better than the flavor combination of blue cheese, roasted squash seeds and the taste of a balsamic glaze. Believe me, I couldn’t stop myself from eating it as we made this meal. Now think about also adding some prosciutto, and roasted squash on a pizza, and you’ve got a little slice of yum!

So if your still wondering, why squash on a pizza? First of all, I don’t know about you, but roasted squash is so delicious this time of year. Maybe it’s a comfort thing? Or maybe, it’s just the smell when you roast it? And, why not! It’s definitely something different from the normal, red sauce and pepperoni. And plus, this pizza has the perfect combination of sweet, salty and tangy. All in one!

We used to go to a restaurant that served the best squash pizza. I guess you can say, we were inspired. Unfortunately, they are no longer in business, so I’m so glad we’ve discovered how to make it at home…and you can too!

What you’ll need:

  • 1 butternut squash (save squash seeds)
  • 1 ball of pizza dough (recipe on the blog)
  • Olive oil
  • Salt and pepper
  • Blue cheese crumbles
  • Mozzarella
  • Parmesan cheese
  • Prosciutto
  • Balsamic vinegar

Start by preheating your oven to 400 degrees. Wash and cut the top, and bottom off your butternut squash. Then cut it in half the long way. Scoop out the guts and seeds and place in a bowl, and set aside. Place the butternut squash on a sheet pan, rub the flesh side with olive oil and season with salt and pepper. Place in the oven for approx 50 mins. Or until your squash is soft.

After your squash is in the oven, it’s now time to roast your seeds. You’ll have to wash your seeds first. Fill up your bowl with water, then run them through a strainer. Repeat, until they are clean. Then make sure they are dry. Place them in a sauté pan with olive oil, and let them cook on low. Keep a lid handy. These things can pop like popcorn. And make sure to season them with a little salt and pepper. I made 2 batches. These things are delicious. This is your warning. Make sure you save enough to garnish your pizza.

Now it’s time to make your balsamic glaze. You’ll need a small pan, add approx half a cup, and cook on low and continue to stir. It’s ready when the liquid coats your spoon. It should be sweet. Now, set that aside. It will be drizzled on your pizza, once it’s cooked.

The next step is to roll out your pizza dough. If you follow our pizza dough recipe, you’ll only need one of the dough balls. Even though, if you wanted to make 2 squash pizzas, you should have just enough ingredients.

Once your squash is done, scoop it out and place in a bowl. Add salt and pepper to taste. Increase your oven to 500 degrees (the hotter the better) and then spoon your roasted squash on to your rolled out pizza dough, just like you would with pizza sauce.

Then add a thin layer of mozzarella, blue cheese and add your prosciutto. And grated Parmesan cheese on top, before you place it in the oven.

Cook your pizza for approx 10 mins or until it’s done. Then take it out, and garnish with the roasted squash seeds. Some grated parmesan. Then drizzle it with your balsamic glaze.

{Peanut Butter Stir Fry Noodles}

I’ve always heard of this “Meatless Monday” concept and I like it!! I like it a lot. The thought of picking one day a week to go meatless is not only healthy but in the long run will save you money. Just think of all the meals you can create just rummaging through your kitchen. I often go meatless a couple times a week. Mainly because it’s easy and I have a vegetarian in the house. I thought it would be fun to share a Meatless meal with all of you…

{Peanut butter stir fry noodles}

You will after you taste the sauce.


My kids are a fan of noodles so this meal was perfect! The sauce is made like a stir fry sauce but then you add peanut butter.




Look around…..You just might have all the ingredients. I only had a small amount of cilantro this time to work with but I’ve learned even the stems have flavor.



What you’ll need:

Soy sauce
Cayenne pepper
Pure Sesame Seed Oil
Garlic cloves
Brown sugar
Citrus champagne vinegar
Ginger
Peanut butter
Peanuts
Olive oil
Cilantro
Veggies
1/2 box of Spaghetti noodles
Salt and pepper



Making your sauce:

Find a bowl. Add 1/2 cup soy sauce. Then chop up and add your cayenne pepper (remove the seeds) Then add 1 teaspoon of sesame seed oil. Mince up 2 cloves of garlic and add then to the bowl. Add 3 tablespoons of brown sugar and mix it in. Then 1 Tablespoon of citrus champagne vinegar. Peel your ginger and mince it adding 1 Tablespoon to your sauce. Chop your cilantro and add to your bowl. Roughly 1 Tablespoon (more if it’s available). Then mix one more time.

Transfer your sauce into a blender. This is when you add 1 Tablespoon of olive oil and 2 tablespoons of peanut butter. And a dash of salt and pepper then blend until combined.
Prep your veggies:


Choose your favorite veggies, or frankly what’s available at the moment. I had Peapods, broccoli, Carrots and red cabbage.


Start your noodles. You’ll need about 1/2 a box of spaghetti noodles. Then get your pan ready. Add a splash of olive oil to your pan. Add your veggies. Start with one, sautés a bit remembering to add a dash of salt and pepper then continue to add another until it looks like this.

Continue to sauté your veggies, then add your sauce. Once your noodles are ready take a kitchen tongs and add them to the pan. Don’t add them all. Add some and toss making sure they are covered in sauce. Toss again making sure the veggies are mixed in with the noodles and garnish with cilantro and peanuts.

And there you go….

Meatless, but yet delicious!!
