How to make your frozen pizza night even better…

Tonight was one of those nights, when a frozen pizza was a must! With thanksgiving days away, and a blizzard coming within hours, my shopping cart was plump with ingredients for way too many dishes. Unfortunately, dinner wasn’t one of them. Well, I guess I did have ingredients for a salad. But I was still pondering the idea of something other than a frozen pizza.

So there I was, my shopping was done and as I walked outside the snow was already starting to fall. And that’s when it hit me…ahh, I should of just grabbed that frozen pizza. After realizing, I also forgot a couple more items, I quickly drove to another store to get that dreaded pizza.

Later that night, after I had a bite of salad and my slice of frozen pizza, I sure was glad I made that second trip to the store.

So if you’re looking to jazz up a frozen pizza night….Salad might be your ticket! Any kind of salad works really. But sometimes, it’s fun to get fancy and try to duplicate something you would find at a restaurant, and why not!!

All I could think about while shopping was how good blue cheese and pears are together. That combo is my favorite. Well, anything with blue cheese really. If your a fan of blue cheese, give this one a try!

•Pears with blue cheese and candied walnuts on a bed of arugula dressed with a balsamic vinaigrette•

Doesn’t that sound delicious? Maybe a little too fancy? Naaa…Fancy can taste amazing!!

Salad ingredients:

•1 package of arugula

•1 ripe pear

•Blue cheese crumbles

•Walnuts -(candied walnut recipe below)

You’ll need a big bowl. Throw in a little arugula. Sliced pears and sprinkle in some blue cheese and when your candied walnuts are ready throw them in. Wait to dress your salad til right before you eat.

Making your candied walnuts:

Ingredients:

•Sugar

•Salt and pepper

•Cayenne pepper

•1/2 cups walnuts

Take a small sauté pan and add 1 tablespoon of sugar. Dash of salt and pepper, tiny dash of cayenne pepper. And 1/8 teaspoon of cinnamon. Stir And cook on med heat just until the sugar mixture starts to melt. Remove from heat (it will continue to cook. Then add your walnuts 1/2 cup. Mix til they are covered.

These are lightly coated. If they get stuck together just break them apart.

Making your balsamic vinaigrette:

Ingredients:

Salt and pepper

3 tablespoons Olive oil

1 tablespoon Balsamic vinegar

1 garlic clove minced

1/2 teaspoon honey

1/2 teaspoon Dijon mustard

Start with a bowl and add your balsamic vinegar, garlic, salt and pepper. Then add honey, Dijon mustard and whisk as you slowly add your olive oil. Continue to whisk til combined. Whisk again before adding to your salad.
