City Foodie Farm Dark chocolate chunk cookies

Since I saw there was a national cookie day this week, I thought It would be fun to share a yummy cookie recipe with all of you. This was a first. I’m usually not much of a baker, and I would usually just stick to making a recipe off the back of a chocolate chip bag. But I tell you what, this was fun to play around, and come up with something new.

If you love dark chocolate, you will fall in love with these cookies! But beware, hot out of the oven they can be a messy one. My daughter had a face full of chocolate after sampling them, she wanted more. And after my husband sampled them, he agreed this recipe is a keeper!

Ingredients you will need:

  • 1 1/2 sticks of softened unsalted butter
  • 1 Egg
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup of dark chocolate chunks (you can add more to your liking) pictured is 1 bag full.

Directions:

Preheat your oven to 350 degrees. Add 1 1/2 sticks of soft unsalted butter to your mixing bowl. (I used my stand mixer) Then add 3/4 cup granulated sugar and 3/4 cup brown sugar and cream together on medium until combined. Then add 1 egg and 2 teaspoons of vanilla and mix on low.

Now it’s time to add 2 cups flour, and 1 teaspoon salt, 1 teaspoon baking soda and mix on low. Once combined, add in the chocolate chunks on low. I used a ice cream scooper to form the cookie dough. You might find that some of the chocolate chunks fall out of the dough. Just form the cookies and place them on the silicone mat on your cookie sheet, and squish in some chocolate chunks on top.

Bake for approx 10-12 mins at 350 degrees. I found 10 mins was a perfect time to take them out. Be careful not to over cook. You might question if they are done like I did, but take them out, and let the cookies sit for 5-7 mins until they cool, then transfer to a cookie rack. You’ll have about 2 batches of cookies. Depending on the size of your cookies. Approx 24 cookies.
