Roasted Brussels Sprouts on a bed of whipped goat cheese & drizzled with honey….

Who loves Brussels sprouts? I know I do, and so does my family. So when we see it on a menu at a restaurant, we usually will consider ordering it. And that is exactly where we got the inspiration for this dish!

One of our favorite things to do, is to go out to eat. Not just anywhere. But go to a place, that will inspire us. We love trying to figure out how the dish was made, and what we think is in it. And how we can duplicate it, or make something similar.

Last Sunday, we ordered a crispy Brussels sprout dish, where the Brussels sprouts were deep fried. And just like this one, served with goat cheese. This dish definitely wasn’t the same, but it sure gave us the inspiration to put this one together.

We first made this recipe this past weekend, for our thanksgiving celebration with my husband’s family. It went over pretty well! It definitely was delicious!! I know I went for seconds……

The simple steps to create this dish:

  • Roast the Brussels sprouts on a sheet tray.
  • Whip your goat cheese and spread on a platter.
  • Pour your roasted Brussels sprouts on top of the goat cheese.
  • Last step, drizzle with honey. Make sure they are coated!
  • Now your ready to eat!!

Ingredients you’ll need:

  • 3 packs of Brussels sprouts (or enough to fill a sheet tray)
  • Olive oil
  • Salt and pepper
  • Fresh goat cheese ( log form, not crumbles)
  • Heavy cream
  • Honey
  • Fresh rosemary

Let’s cook:

First you’ll need to remove any bad leaves from your Brussels sprouts, and cut the stems off. Then wash and dry them, arrange them on a sheet tray and drizzle with olive oil, toss and sprinkle with salt and pepper.

Cook on 425 degrees for 20-30 mins. Once crispy, take then out and let them cool. Now it’s time to get your goat cheese ready. Put the goat cheese in a bowl, and mix in a little heavy cream, and whip your goat cheese. Then add chopped rosemary, salt and pepper. The heavy cream will thin out your cheese, so you can spread it on a platter. Then add your Brussels sprouts and drizzle with honey until they are coated.

When you serve them, make sure you include the goat cheese on the bottom. It’s delicious!!

This is a great way to eat your veggies!
