Peanut Chicken Stir Fry

This Easy Peanut Chicken Stir Fry is one of my go-to meals when I’m not quite sure what to make.

This dish is filled with colorful veggies, delicious chicken, and noodles covered in peanut sauce what’s not to love? I can’t wait to share this dish with you!

All you need to do is whip up this peanut sauce, marinate your chicken, chop some veggies, cook some noodles and then cook everything together. Easy peezy I tell you!!

It’s even easier if you prep your veggies ahead of time to make this meal super quick. Knowing how busy the week can get I would highly recommend prepping some of it ahead of time.

The weather has been wonderful here, and the leaves are really starting to show their beauty. I am truly looking forward to the change in season. The cool weather brings such a comforting feeling.

Who doesn’t love to be cozy indoors? With perhaps some blankets and a fire? Yes, please!! Plus we are awaiting the arrival of our newest blessing. Let me tell you, it’s been a long road!

The garden has really taken a backseat this year

Sure we planted things but we haven’t really spent much time tending to them. In the years past I would spend hours in the garden daily. This year that wasn’t the case. I also didn’t can anything this year.

The garden is currently filled with weeds and all the leftover plants that thankfully gave us such wonderful harvests this past summer. A complete overhaul is in order and lastly the planting of our garlic patch before the cold really sets in. Then I’m truly ready for the weather to change.

What’s not to love about fall

The colors, sweaters, and just being cozy. Fall really gets me in the mood for cooking. You know, all those meals that fill your house with all those wonderful smells. Those meals make you feel really good!

I’ve uploaded a couple of those recipes on my YouTube channel if you’re interested in trying them. One we really love is our Hot Beef Sandwiches and my mom’s spaghetti. I’ll leave a link below ⬇️

My husband just made “his” version of spaghetti and meatballs this past weekend and it was delicious! And yes, it did fill our home with that amazing, comforting smell.

Believe me, I know how hectic the week can get. Especially when you have appts, kiddos in sports or any events. That is the main reason I wanted to share this meal with all of you. It’s a great way to get your veggies in and it’s kiddo approved!

Isn’t that always the case when vegetables are involved? It’s all the chopping etc…But there are ways you can speed things up by prepping things ahead of time. Let’s go over what you’ll need…

Peanut Chicken Stir Fry

This meal is great with or without chicken. If your looking for a new meatless Monday meal try this one without chicken. Just make sure to add more veggies.

Peanut stir fry vegetarian option

This meatless version had 2 kinds of peppers, broccoli, carrots, purple cabbage and celery. It was topped with green onions just before serving.

What you’ll need for this Peanut Chicken Stir Fry:

  • 1-2 Chicken breasts
  • Veggies- Peppers, sugar snap peas, broccoli, carrots work great. But feel free to use what you have. I’ve used purple cabbage as well
  • Peanut sauce (you’ll make it yourself) I’ll go over the recipe
  • Spaghetti noodles- feel free to use rice if you want
Ingredients for peanut sauce

Ingredients for your peanut sauce:

  • 1/2 cup soy sauce-You can try using less or use a low sodium version
  • 1/2 jalapeño (remove the seeds)
  • 1 teaspoon sesame oil
  • 2 cloves of garlic
  • 3 tablespoons brown sugar
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon ginger
  • Handful of cilantro
  • 1 tablespoon of olive oil
  • 2 tablespoons of peanut
  • The juice of 1 orange
  • Honey (optional)

*Note: If you want to lower sodium, add less soy sauce or use a lower sodium variety. You might find with adding less soy sauce you will have to add less brown sugar or honey to make it sweeter. Keep in mind your using part of the peanut sauce for the marinade. The rest is for your veggies.

You can throw everything into your Nutribullet or a blender

After it’s blended taste it. Make sure it has the right balance. I’m always making changes to mine. If you feel like it needs more sweetness sprinkle in some more brown sugar or a squeeze of honey. Also, feel free to add less soy sauce if you’re watching your sodium.

Making homemade peanut sauce

Now that your peanut sauce has been made you’ll want to chop your chicken into smaller pieces and get it marinating. Add your chicken to a shallow dish and top it with just enough peanut sauce to coat it. Cover and place it in the fridge while you prep your veggies.

Before you start cooking your chicken make sure you start your noodles.

Cooking spaghetti noodles

Add 2 spoonfuls of coconut oil to a pan and start adding your chicken. Cook until brown. Then remove it from the pan onto a plate and set it aside so you can start cooking your veggies.

Cooking peanut chicken

In the same pan add another dollop of coconut oil. Add in your peppers, broccoli, and sugar snap peas. Or any vegetable you choose. Cook for a couple of mins. At this point, your noodles should be ready. Add your chicken back into the pan and mix everything together.

Peanut chicken and veggies

Add some noodles and peanut sauce and toss everything together. Let it cook for 5-10 mins and just before serving you can garnish the top with some sliced green onions, cilantro, and peanuts if you’d like.

Doesn’t this look delicious? That’s why I said it was my go-to meal. I think you’re going to love it!
