Chocolate chip muffins

If your looking for a little sweetness in the morning, than these are your ticket! And don’t worry, no judgement here. It’s a muffin, right?
These guys are perfect in the morning, or even if you need a little treat during the day. Kids will love them too! I even sneaked in some Greek yogurt goodness in there. Maybe that’s the reason they are so good? Ok, well maybe it’s the chocolate too!
The main reason I came up with this recipe was for my kids. I know how picky they can be with breakfast. And if you didn’t know this already, I also have a sweet tooth! It’s something I hope to change. But for now, let’s make some muffins!
Ingredients for chocolate chip muffins:
- 1 stick of softened unsalted butter
- 1 cup of granulated sugar
- 1 Egg
- 1 teaspoon of vanilla
- 1 pinch of salt
- 1 3/4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup vanilla Greek yogurt
- 1/4 cup milk
- 1 1/2 cups semi sweet chocolate chips
Preheat your oven to 375 degrees
Start by creaming together 1 stick of softened butter and 1 cup of granulated sugar with a hand mixer.

Then add 1 egg, 1 teaspoon of vanilla and mix together. In a separate bowl add 1 3/4 cups flour, 1 teaspoon baking powder and 1 teaspoon baking soda and a pinch of salt.

Now it’s time to add your flour mixture to your butter and sugar mixture. Then add 1 cup of Greek vanilla yogurt. When mixing with a spoon you’ll notice the batter is quite thick. So pour in 1/4 cup of milk and stir. Now it’s time to add 1 1/2 cups of chocolate chips to the mix. You’ll have some left in the bag, to add a couple to the top.

Once your chocolate chips are mixed in, start filling your muffin liners.

Then add a couple to the top, to make them look pretty.
Bake at 375 degrees for 20 mins



Make sure to let them cool before serving, or they can be messy. Well, I guess getting messy isn’t always a bad thing, right?
