Are you wondering what to do with your leftover rotisserie chicken? Today, I’m going to show you how to use every last bit by making some delicious homemade chicken stock! Once you learn how to do it you’ll never throw that leftover rotisserie chicken away again!

For years, I always bought chicken stock. Simply because it was the easy thing to do, but after learning how to make my own, I’ve changed my ways. I’m sharing this recipe because I want others to learn and understand how amazing your meals can taste with homemade chicken stock. It’s not only easy, but you’ll be using up ingredients you’d typically throw away…like that leftover rotisserie chicken! I call that a win-win in my book ð.

When I say it’s easy I genuinely mean it! One key ingredient is time. You’ll need about 5 hours so plan on making it on a day you are home to let it simmer away on the stove. Believe me, you’ll want to be home because your house is going to smell amazing!! It’s one of my favorite things to make, actually, that and my apple galette. Both are the real smells of comfort!!

Have I told you how much I love buying rotisserie chicken? Maybe because I know If I pick one up It means it’s going to be an easy dinner! I also love them because I can usually get two meals out of them. A typical dinner I make with a rotisserie chicken is cutting up the breasts and adding a simple baked potato and a vegetable side. We love brussels sprouts!! Then I’ll freeze the rest of the rotisserie chicken to make some stock. I usually just place the leftovers in a ziplock bag and freeze them until I have more time to make stock or on days I want to make soup. Making chicken stock takes time but I can tell you it’s worth it!

My favorite soup to make with rotisserie chicken is my homemade chicken noodle soup. It’s a soup my husband grew up eating, and now I make it for our kids. It’s a soup the family loves! I make it a little different from how his mom made it but we still call it Grandma Anne’s soup. It’s truly a bowl of comfort!
