Oatmeal Raisin Breakfast Cookies

What’s your favorite part of an oatmeal cookie? Mine is that hint of cinnamon you taste. So with this recipe, I made sure it had plenty of it. And I also included 2 different kinds of raisins. And let me tell ya, they are good! They didn’t last long in our house. Good thing we were able to share some before they disappeared!

My sister actually named them, so we’ll go with it! And I think it’s a perfect name. They are a cross between a cookie and a sweet scone. After you taste these you’ll want to eat them for breakfast too! Or any time of the day.

BTW Happy 2020! This past Christmas/New years break has been so nice to be with family. Besides some of us being sick it was great! Christmas with kids can be so magical! And with being a parent, you kind of get to relive it! But now with the holiday past us, the decorations need to come down. And so does my tree…

But for now, let’s make some dough….

Ingredients:

Makes 30-34 cookies

Directions:

First preheat your oven to 350 degrees

Start by creaming your butter and sugar together. 1 1/2 sticks of unsalted softened butter. 3/4 cups of granulated sugar and 3/4 cups of brown sugar. And add them to your mixer, on low to med until combined.

Then add your 2 eggs and 2 teaspoons vanilla. And mix on low.

Now add your 2 teaspoons cinnamon, 1/2 teaspoon salt, 1 teaspoon baking soda and 2 cups of old fashioned oats. Mix on low. Then add 2 cups flour and mix on low.

Add in 1 cup California raisins and 1/2 cup golden raisins. And mix on low.

Now your dough is ready…I cook mine on a Silicone baking mat on a cookie sheet. Works great!!

Bake at 350 for 10-12 mins.

I found 11 mins were perfect!
