This Whole Roasted Coconut Curried Cauliflower is so good!

Have you ever roasted a whole head of cauliflower? Let me tell ya, it’s so much fun! No worries about cutting it up, with this recipe you’ll be roasting the whole thing. Do you love Indian food? Then you’ll love this whole roasted coconut curried cauliflower. The flavors of the coconut milk, Indian spices and the color of the turmeric blend beautifully together.

This recipe was inspired by some recent takeout. With Covid-19 many restaurants have been making some changes. Sadly some have closed, and others are only doing takeout. Even the hard to get a reservation, fancy restaurants are creating a menu for takeout. Let’s just say, we do our part to help our local restaurants through this unforeseen time. Our date night now includes all of us haha. Well, at least we are all enjoying some good food together!

I am definitely a fan of cauliflower. I do cook a lot of vegetarian dishes, and cauliflower is one of those vegetables that can pass for chicken. This dish was so fun to create! After it’s slow roasted (just like meat) you can put it on a plate and carve off what you want. I honestly couldn’t stop eating it! It’s that good!!

So if you love Indian dishes, you’ve got to try this. Plus roasting a whole cauliflower is so much fun, and simple!!

Let’s get started!!

Whole Roasted Coconut Curried Cauliflower

Serving size: 4-6

Prep time 20 mins

Cook time 1 hr 30 mins

Ingredients you’ll need:

  • 1 head of cauliflower
  • 1 cup of coconut milk (from a can)
  • 1 tablespoon of turmeric
  • 1/2 teaspoon of cumin
  • 1/8 teaspoon of cayenne pepper
  • 1/8 teaspoon of ground coriander
  • 1 teaspoon of curry powder
  • 1 teaspoon salt
  • 1/4 cup of golden raisins
  • 1 tablespoon of maple syrup
  • about 2 tablespoons of Panko bread crumbs (sprinkled on top)
  • chopped cilantro to garnish

First you’ll want to preheat your oven to 400 degrees

Next you’ll want to start measuring out your spices. Grab a bowl and add the following…..

  • 1 tablespoon of turmeric
  • 1/2 teaspoon of cumin
  • 1/8 teaspoon of cayenne pepper
  • 1/8 teaspoon of ground coriander
  • 1 teaspoon of curry powder
  • 1 teaspoon salt

Next you’ll want to mix the spices together and add it to 1 cup of coconut milk and stir.

Now add in 1/4 cup of golden raisins and 1 tablespoon of maple syrup and stir.

Next it’s time to prep your cauliflower head.

First peel the leaves off the bottom, and wash and dry your cauliflower. Next grab a small baking dish (mine is 8×13) just big enough to hold your cauliflower, with a little room on each side.

Now flip your cauliflower over.

Next pour a little bit of the coconut mixture in the bottom, and shake it. You want flavor to be throughout your cauliflower. Then flip it back over and place it in your baking dish. Next slather the whole cauliflower with the coconut mixture. Make sure everything is covered.

Lastly sprinkle on some Panko bread crumbs all over your cauliflower and add 1/2 cup of water to the bottom of your pan.

Leave it uncovered and slide it in your 400 degree oven. It will need to cook for approx 1 hr 30 mins.

As it cooks you’ll notice the coating on your cauliflower will cook and fall off. You’ll want to baste your cauliflower with that sauce every 15-20 mins.

The sauce will thicken as it cooks.

By now your cauliflower will have a beautiful golden color. It will also still be intact but soft if you test it with a knife.

When it’s done. Place your cauliflower on a plate and top it with some cilantro.

Now your ready to eat! We placed ours on the table, like family style and carved off what we wanted. That way you can easily go back for seconds!!

I hope you enjoy this meal, we sure did! This Coconut Curried Cauliflower would be amazing served with some lentils. We had ours with some mashed potatoes and sauteed kale to keep the kids happy.
