Dark Chocolate Chunk Banana Bread

This Dark Chocolate Chunk Banana Bread is not your typical banana bread.

In this banana bread you will find dark chocolate chunks throughout. Plus it’s not too sweet. It has the perfect balance of sweetness with these added dark chocolate chunks. This dark chocolate chunk banana bread has a great banana flavor too. It will satisfy any chocolate lover, but you have to like bananas.

I love buying bananas but I hate how fast they go bad. What comes to mind when you see a pile of brown bananas sadly rotting away on the counter. My mind immediately tells me to grab a ziplock bag and quickly get them in the freezer.

My husband on the other hand doesn’t feel the same way about bananas. He usually tosses them before I can save them! You see he isn’t a fan of bananas like me.

Bananas are something I always buy. They are great for those times you need something quick! To be honest, most of my bananas end up in the freezer because they are perfect for smoothies. But if you let them sit too long, you know those really brown ones, they are exactly what you need for some delicious banana bread.

Let me be clear…I don’t make banana bread that often.

The main reason is my family doesn’t love it, but I do and we have some other family members that enjoy it as well. I love to surprise my sister and her family with a batch of banana bread muffins and keep a couple for myself. It’s a gift they always appreciate! Plus it allows me to save more of my bananas haha.

Fall is a perfect time to bake.

The gardens are done, and my inside projects haven’t started yet. This is the time I find myself creating new recipes. My pile of over ripe bananas and a bag of dark chocolate chips were my inspiration this time.

Dark Chocolate Chunk Banana Bread

Ingredients

  • 4 over ripe bananas

  • 1/2 cup of granulated sugar

  • 1/4 cup of melted coconut oil

  • 2 eggs

  • 2 cups of all purpose flour

  • 1 tsp of salt

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 1 bag of dark chocolate chunks

  • 1 glass pie pan

Directions

  • First you’ll want to mix your wet ingredients. In a large mixing bowl remove the banana peels and add the bananas to your bowl. You’ll want to mash the bananas with a fork.

    Next add 1/2 cup of granulated sugar to the bowl and combine. Then add 1/4 cup of melted coconut oil and mix everything together. Next add 2 eggs and combine. Set aside.
  • Now you’ll want to grab another bowl and start measuring your dry ingredients.

    Add 2 cups of all purpose flour to the bowl then 1 tsp of salt, 1 tsp of baking powder and 1 tsp of baking soda. Next combine all ingredients and set aside.
  • Now you’ll want to grab the bowl with your wet ingredients and pour in your dry ingredients and combine.

    Lastly you’ll want to add your dark chocolate chunks. Pour in most of the bag leaving enough to add to the top. Mix until combined.
  • Next preheat your oven to 325 degrees. Grab a pie pan. I’m using a glass one. You’ll want to grease the bottom and all sides with coconut oil.

    Now add the batter. Spread it evenly in the pan. You can add chocolate chunks to the top. Adding one by one, pushing them into the batter carefully.

    Once your oven is preheated you can place your pan in the oven. Cook for 50-55 mins.
  • Take out your pan and make sure it’s thoroughly cooked by sticking a knife in the middle. If it looks uncooked place it back in the oven. At 50-55 mins your banana bread should be done.
  • Let it cool completely before cutting your banana bread. I cut mine in pie pieces.

    If you have leftovers you can simply wrap each one up with some parchment paper and place them in a zip lock bag and into the freezer.

    To warm them up simply put them in the microwave for 1 min. You can leave it in the parchment paper to make them portable. They can be messy when hot with all the chocolate. I love them with coffee!
