Cauliflower Tacos topped with a sweet and spicy slaw
I love cooking with cauliflower. It’s one of those vegetables that can pass for something else, Chicken that is. This all meatless meal is delicious and super easy to make!! It would be a great addition to any taco Tuesday meal!!
Ingredients for tacos:
-Half a head of Cauliflower cut up in little florets.
-1 Red & 1 Green pepper cut into thin strips or julienned
-1/2 of a large yellow onion cut into thin strips or julienned
-1 packet of taco seasoning
-1 package of corn tortillas
-Salt and pepper
Ingredients for slaw
– 1 red cabbage (2 cups needed)
– 1/2 Jalapeño no seeds
-1 Tablespoon maple syrup
-1 Tablespoon citrus champagne vinegar
– Juice of 1 orange
Preheat your oven to 350
Making the Cauliflower Tacos:
Add your sliced peppers, onions and cauliflower onto a sheet pan. Drizzle with olive oil and toss mixture with fingers. Then sprinkle the taco seasoning pack on the peppers, onions and cauliflower and add a little more olive oil and toss again.
Put in the oven at 350 and cook for 20-30 mins. When the cauliflower is soft it’s ready to go.
Making your slaw:
Cut your Red cabbage into little strips, dice and remove seeds from half a jalapeño. Add the juice of 1 orange. 1 tablespoon of maple syrup and 1 tablespoon of citrus champagne vinegar and toss. Add a dash of salt and pepper to mixture. Set aside while your tacos are cooking. You will be adding this to the top of your taco. No salsa is needed with this sweet and spicy addition.
-If you have a gas stove your can warm your tortillas right on the stove and give them a little color. Be careful they can blacken quickly. Turn over continuously until they are warm with some color.
Now assemble your tacos. Take your tortilla, cauliflower,pepper and onion mixture. Then add your slaw and any cheese you want on top.
